Life is Too Busy! Take Time for Your Family!

We love because He first loved us. 1 John 4:19

Life is so busy, I haven’t written a post since February! It’s time to slow down and take care of ourselves and our family. Tonight I made a family favorite and it’s soooo easy! It’s kind of just dump a bunch of your favorite ingredients in your favorite cast iron skillet and you have some spicy deliciousness!

First thing you do is dump a large can of pinto beans in the bottom of your cast iron skillet. Drain the beans first! You can easily adjust this recipe depending on how many people you are serving. I have a family of 5, so I need a big can of beans. A smaller family can adjust is to just one can of pinto beans. After you put down the layer of beans, add a layer of Spanish rice. I love Uncle Ben’s Ready Rice! You cook it in the microwave so it’s super easy and one less pot to clean up!

Next you brown a pound of ground beef and mix in your favorite taco mix. My favorite ground beef comes from 1915 farm right here in Texas! It is grown on a small farm by Catherine and Tanner, the cutest farmer’s you’ve ever seen! Add the taco meat to the top of the bean/rice combo!

Next you add a layer of shredded cheese! Any kind of cheese is good, but I love a mixture of several types of cheese. My grocery store calls it the Mexican blend. It’s super yummy! Sprinkle as much cheese as you want, I like to go a little heavy on the cheese, but my son only likes a little bit of cheese, so I definitely go heavy on one side and light on the other.

Ok…so maybe I go heavy on the cheese all the way around!

Top your casserole with 2 packages of cornbread mix. If your making a small casserole just use one package. Mix the cornbread according to the package instructions and then pour it over your tower of yumminess!

Mix according to the label and then pour over your casserole. I use sweet cornbread mix because it really makes a difference in the taste. Yummy!!!
It doesn’t look very yummy yet, but just wait!

Bake for at least 30 minutes or until your cornbread is done. The cornbread should be golden brown and a toothpick should come out clean. Now get ready for the best dinner you’ve had in a long time!

Oh my goodness! This is a super yummy dish! Just add a salad and gobble it up, don’t worry I bet you’ll have leftovers which means you don’t have to cook tomorrow!!! I love it!

Have an amazing time sharing dinner with your family. Start dinner with a prayer and engage in conversation with all of your family members. Remember that we love because God first loved us!
