Breakfast for Dinner! It’s Huevos Rancheros!!!

Tonight I was looking for an easy meal to cook for my family. They are soooooo burned out by my usual meals, so I had to kick it up a notch! I absolutely love The Sweet Gourmet from Tyler, Texas and their funny Instagram videos. I discovered Pam, Lucy, and Kathy one night around Christmas and I fell in love with their cooking videos. They make the yummiest meals with the most gorgeous cookware and they are an absolute hoot to watch! So I went back to a video they recently posted making huevos rancheros (ranch eggs) and thought I would give it a try.

I used Le Creuset mini ramekins from Sweet Gourmet for this delicious meal. They are the perfect size!
Set your ramekins on a baking sheet so that you don’t have to clean up any spills in your oven!

First I greased 4 ramekins and placed them on a baking sheet. This makes clean up a breeze!

Then I placed a small low carb flour tortilla in each bowl. Don’t tell my boys, they think they were eating regular flour tortillas!

Next, add a layer of black beans and about 3 teaspoons of your favorite salsa. (Honestly I think I added about 3 tablespoons!)

My favorite salsa comes from Stump Farms and you can get it at the Tomball Farmer’s Market!

Then add one egg to each dish. My kids wanted their eggs sunny side up, but Steve and I wanted ours scrambled, so before I put them in the bowls, I mixed ours up!

Sprinkle the top of each bowl with a little bit of salt and pepper.

Add a layer of shredded cheese and bake at 350 for about 30 minutes depending on how well you like your eggs done. I don’t like runny eggs, so I actually cooked ours a little longer!

I wanted to take a lovely picture of our beautiful dinner table, but this meal was real world. My family devoured it the second it hit the table. I did add a nice fruit salad to go with it.
